INGREDIENTS
2 cups – Ontario greenhouse vine-ripened tomatoes (chopped)
1 (250 g) – fresh mozzarella ball (cubed)
1/3 cup – basil (thinly sliced and divided)
2 tbsp – olive oil
Toasted baguette slices
8 oz – cream cheese (room temperature)
1/3 cup – mayonnaise
2 tbsp – Parmesan cheese (grated)
2 cloves – garlic (minced)
1/2 tsp – salt
1/4 tsp – freshly ground pepper
DIRECTIONS
Preheat oven to 400°F. Grease a 4 cup baking dish. Whip cream cheese with electric mixer until light and fluffy. Add mayonnaise, Parmesan cheese, garlic, salt and pepper; continue to beat until combined. Stir in tomatoes, mozzarella, 1/4 cup basil and olive oul. Scrape into prepared baking dish.
Place on a baking sheet. Bake for 12 to 15 minutes or until bubbling and cheese is melted. Sprinkle with remaining basil. Serve with toasted baguette slices.
